Animal pork gelatine in sheets
For use in both hot and cold cuisine.
Soak the sheets in cold water for 5-7 minutes, then squeeze out the gelatine thoroughly.
Hot dishes: it dissolves immediately (sauces, light creams, and whipped mousses with lower fat content).
Cold dishes: (in whipped cream, creams, puddings, for fruit jellies, in aspics), place swollen gelatine in a bowl, heat in a microwave or in a pot, and stir thoroughly until dissolved. Caution!!! Do not overheat, only dissolve!
After using in a dish, refrigerate for about 4 hours.
Never reverse the process, as the dissolved gelatine sets immediately and forms lumps.
