Instructions for Use:
Macarons:
pinch of salt, 200g protein, 225g sugar semolina, 250g almond flour, 75ml water, 250 sugar flour.
Mix almond meal with icing sugar. We divide the proteins in half (100 and 100 g).
Prepare sugar semolina with water in a saucepan. Whisk the first half of the proteins together with a pinch of salt and cook with the sugar water. We cook at 118 ° C. Pour the broth into the snow (three times) and whisk. Meanwhile, pour the other half of the egg whites into a mixture of almond flour and sugar, a porridge is formed. When the snow cools down slightly, stir it into a slurry. We can add cinnamon, coconut, food coloring, cocoa, etc. to the macaroon dough, depending on the type of macaroon we have chosen.
Spray this basic mixture on a metal plate or silicone pad and let it dry for 45 minutes. Then bake the macaroons for 9 minutes at 180 ° C (for the lowest possible oven power). We take the baked macaroons cold from the baking tray!
According to the confectioner Pavel Juraška, we combine macaroons with any content. You can use jam, chocolate ganza, mascarpone with fruit, butter cream, etc. It depends on our taste.
