Agar is a plant-based binder and versatile product.
It can be used as a substitute for gelatin, but agar contains no animal ingredients. When using agar as a gelatin substitute, you need to slightly adjust your recipe. The powder dissolves in hot liquid (water, milk, or cream), and after dissolving, you can add it to the rest of the dish.
The binding strength of agar agar is 4-5 times stronger than gelatin. You can use approximately 8 grams of powder per 1 liter of liquid. Agar sets at room temperature, so your food doesn't have to set in the fridge and will last longer in warm weather. If using agar agar in dairy-based products, it is recommended to refrigerate them. Agar agar loses its binding power after about 2 days.
FunCakes agar agar has a gel strength of min 700 g/cm3 (related to Nikan / 1.5% 20°C). This product is colorless and tasteless.
A complete vegan substitute for gelatin! When using agar agar as a gelatin substitute, adjust your recipe slightly. You need about 4 to 5 times less than when using gelatin.
