Decorative isomalt sugar pearls for creating molded, sculpted, pulled, or blown edible decorations from caramel.
After melting, it can be dyed (preferably with gel colors) and flavored with fruit pastes, or the finished decoration can be sprayed or colored with powder colors. Once processed, isomalt can be re-melted.
Usage: Melt the isomalt pearls in a pot until all the air bubbles disappear, without adding water or any other ingredients. Cool the pot with melted isomalt in a cold water bath, adding about 10 ml of water for 1 kg of isomalt, which can be colored at this stage. After cooling, pour the mass onto a modeling silicone mat and you can start shaping under a lamp. Once all pearls are completely melted, they can be reheated. However, if the mass is heated too often, for too long, or at temperatures above +150°C, the product will become significantly more brittle. When reheating, we therefore recommend adding a few drops of water again.
