Almond flour made from selected highest quality almonds. Unique for making macarons, cake bases, cakes. In premium quality.
Instructions:
Macarons:
pinch of salt, 200g egg whites, 225g caster sugar, 250g almond flour, 75ml water, 250g icing sugar.
Mix almond flour with icing sugar. Divide the egg whites in half (100 and 100g).
In a saucepan, prepare caster sugar with water. Whisk the first half of the egg whites with a pinch of salt and bring to a boil with the sugar water. Boil to 118°C. Pour the hot syrup into the meringue (in three parts) and whisk. Meanwhile, pour the second half of egg whites into the almond flour and sugar mixture, creating a paste. Once the meringue slightly cools, fold it into the paste. Flavours like cinnamon, coconut, food coloring, cocoa, etc., can be added to the macaron batter, depending on the type of macarons chosen.
Pipe the basic mixture onto a baking sheet or a silicone mat and let it dry for 45 minutes. Then bake the macarons for 9 minutes at 180°C (on the lowest oven setting). Remove the baked macarons from the sheet only after they have cooled down!
Chef pastry cook Pavel Juraška suggests filling the macarons with various fillings such as jam, chocolate ganache, mascarpone with fruit, buttercream, etc. Depending on our taste.
