Vanilmix 500g
Mixture for vanilla pudding cream, cold cream suitable for confectionery products as well as filling in baked products.
Basic recipe: 500g Vanilmix, 1400g water (cold). Pour the entire amount of water into Vanilmix while stirring constantly with a whisk, mix the mixture until smooth and then let it stand for 10 minutes.
Butter cream: 500g of finished Vanilmix mixture, 350g fat (butter, Hera,...). Add the softened fat cut into pieces to the base mixture and beat everything at a higher speed until it becomes firm, smooth cream. If the cream curdles, heat it slightly and beat again.
Yolk cream: 500g of finished Vanilmix mixture, 125g fat (butter, Hera,...). Add the softened fat, cut into pieces, to the base mass and beat everything at a higher speed until it forms a firm, smooth cream. If the cream curdles, heat it slightly and beat again.
Ingredients: sugar, modified starch (E1414), whole milk powder, whey powder, E401 (thickener), E516, E450iii (gelling agent), dried milk products (lactose, milk protein, vegetable and animal fat, corn syrup, hydrogenated vegetable oil, aroma). E160a (dye), aroma.
