Macarons are the pinnacle of confectionery art. Their traditional production is not easy at all.
It depends on each ingredient and the technological process. With the help of our complete Macaronmix mixture, you will make these popular almond sweets exactly as they should be - smooth on the surface, without cracks, crispy on the outside and soft on the inside, airy, with a pleasant almond flavor.
Classic macarons play with colors, are usually filled with a filling color-coordinated with the macaron. Macarons can also be used as a decorative element for confectionery products, especially cakes and mini desserts.
The mixture can be colored with food coloring.
Ingredients: sugar, almonds (22%), wheat starch, dried egg white, vegetable oil (rapeseed), emulsifiers (E472b, E477), dried glucose syrup, skimmed dried milk, thickener E415, salt
Allergens: cereals containing gluten (i.e., wheat, rye, barley, oats, spelt wheat, kamut or their hybrid varieties) and products thereof, glucose syrup made from wheat starch and cereals used in the production of spirits or ethyl alcohol of agricultural origin for alcoholic beverages, eggs and products thereof, may contain traces of soybeans and products thereof, milk and products thereof (including lactose), tree nuts (i.e., almonds, hazelnuts, walnuts, pistachios,...)
Instructions:
Macarons: 500g Macaronmix, 100g water - Mix the ingredients with a spatula at the 2nd speed for 5 min. Pipe onto a baking sheet lined with a silicone mat about 120 macarons (approximately 10g of batter) and let dry for about 1 hour. Bake at 140-150°C for about 25 min.
Filling: 100g Macaronmix, 125g butter, 10g Compound (flavoring) - Mix room temperature butter with the mixture and Compound flavor paste.
Assembly: Fill the cooled macaron with filling (4g) and sandwich with another macaron.
